The unique coated metal Flex Edge Beater, sold separately as an optional accessory, uses a flexible edge on one side to gently and automatically scrape the sides of the stand mixer bowl while mixing.  This eliminates the step, recommended in many recipes, of intermittently stopping the mixer to manually scrape the sides of the bowl during the mixing process
